Timballo pollo alla Desiree


Do you know the movie: The Big Night, about two desperate Italian brothers who own a restaurant in the US? They cook a wonderfull diner in honour of their special quest, a famous singer... They also make this enormous timballo. What a great movie!!
Well, I did not make the same timballo but I will try to bake it in a large bowl. Hopefully it will come out right. If so, I will publice a photo later, if not I have to try again.
The recipe:
4 filets of chicken
1 spoon of dried thyme
salt & peper
1 leek, small rings
1 yellow, 1 green, 1 red pepper, small cubes
1 small zucchini, small cubes
1 onion shredded, 2 cloves of garlic
2 tablespoons of red wine vinigar
1 tablespoon cane sugar
2 tablespoons tomato puree
1 tablespoon Italian mixed herbs
400 g maccharoni
2 mozzarella
2 large tablespoons grated cheese
butter, breadcrumbs, olive oil
Take a large bowl that can handle high temperatures in the oven. Grease it with butter and layer it thinly with breadcrumbs. Grind the chicken in a kitchenmachine with thyme, salt, pepper.
Boil the maccharoni. Heat olive oil in a large baking pan and fry onion, garlic and minced chicken. Add the rest of the vegetables and let bake while stiring. Add tomato puree, Italian herbs, sugar and vinigar and stirr through. Let it it simmer for 10 minutes, while stirring . Taste, add salt and pepper if you like and let it cool. When cooled mix in the mozzarella in cubes and grated cheese. Put it all in the large oven bowl, finish with some breadcrumbs. 40 minutes at 180C. Now the most exciting part: the timballo has to come out of the bowl like a 'cake'.
You can also use Italian sausages , but being not in Italy, and not liking most of the sausages overhere I decided on chicken. You can also try more tomatoes, or mushrooms, or anything else you like (veggies), make it big feast!
